You’ve probably heard that Portland is a vegan haven, right? For me, it’s the most accessible vegan city. New York and Los Angeles might have more restaurants, but they’re not as easy to reach as they are in Portland. The city’s vibe is so much fun and the surrounding landscape is beautiful. We’re going to enjoy a vegan cheese making class while we’re there. We’ll also visit the headquarters of Bob’s Red Mill for a tour, and hopefully Tofurky too. Hotels are expensive in the city, so we’ll stay in the outskirts and travel around via minivan.
